I’ll start by saying I love dairy milk (gasp, I know). I’ve never shied away from a good old glass of two percent. But with that glorious glass often comes some not-so-friendly gut issues. I’ll spare you the details, but I’ve enjoyed watching non-dairy products rise to fame.

Aside from dairy milk, I’m a devout oat milk drinker. I drink it every single day in my coffee and occasional smoothie. I. Am. Hooked. I love the taste, creaminess, and overall feel of oat milk. That said though, I’ve never stopped to consider exactly what I’m putting into my body until now. Is oat milk really the best non-dairy milk? Are there others with better benefits? What should I look for when buying non-dairy milk? The questions go on.

To help you meet your match made in dairy-free heaven, I broke it down into a digestible format that you can use to bring the best non-dairy milk into your life. Here’s what we’re taking into account:

Oat Milk: The Best Non-Dairy Milk for Lattes

Oat milk has been steadily growing in popularity. It’s creamy, tasty, and froths well—making it a perfect choice for non-dairy lattes. It has a slightly nutty and sweet flavor profile that most people enjoy. When it comes to oat milk as a health food, however, you may want to think twice.

“It’s the non-dairy milk with the highest amount of starch,” Horstman shares. “Starch is converted into simple sugars when you digest it and this raises blood sugar. For most of us, oat milk sends us on a blood sugar roller coaster, which isn’t the goal!”

Pros

  • Creamy and delicious
  • Makes a great vegan cappuccino

Cons

  • Drinking it regularly may cause insulin resistance (a precursor to diabetes) and cardiovascular disease
  • High in pesticides if not organic

Best for: Non-dairy lattes and cappuccinos

Almond Milk

Almond milk is my personal go-to non-dairy milk of choice. Its mild taste and slight sweetness makes it tasty for sipping, and it’s great in cereal and in baking recipes. “Almond milk is one of my favorites!” Horstman exclaims. “It’s lactose-free and is typically fortified with vitamin D, vitamin E, and calcium.” She also notes that unsweetened almond milk is easy to find and low in calories. A great choice all around!

Pros

  • Available at most grocery stores
  • Won’t spike your blood sugar
  • Often infused with vitamins

Cons

  • Low protein
  • Producing almond milk requires high water consumption, which causes environmental concerns

Best for: Sipping and baking

Macadamia Milk

Looking for a nutritious, creamy, and sustainable non-dairy milk? Macadamia milk might be your new go-to. Macadamia trees can adapt to changing climates, helping them ration water and use it more efficiently than other nut trees. In terms of nutrition, macadamia nuts are a rich source of monounsaturated fats, protein, fiber, iron, and minerals. However, because non-dairy milks are made by soaking raw nuts in water and blending, your glass inevitably retains a drastically smaller percentage of those nutrients.

But what we love most about macadamia milk? The flavor and mouthfeel. Expect a thick, creamy texture with a hint of vanilla that doesn’t lean too sweet. It’s perfect for blending into your morning smoothie or replacing dairy milk in your favorite baked treats.

  • A more sustainable option than other non-dairy milks
  • Low sugar content
  • Mild, slightly sweet flavor

  • Generally more expensive than other non-dairy milks
  • Can be hard to find in grocery stores

Coconut Milk

If you love the taste of coconut, you’re sure to love coconut milk. The coconut flavor profile is strong, even when mixed with other ingredients. “I love the rich and creamy texture of coconut milk. It’s a great source of healthy fats and nutrients like iron and magnesium,” Horstman shares. She does, however, recommend checking out the ingredients before you indulge. “It’s low in protein and most commercial varieties like you’d find at your local coffee shop or Starbucks contain added sugars and thickeners,” she says.

Best for: Anyone who loves coconut! And Southeast Asian cooking.

Soy Milk

Soy milk crawled so almond milk could walk and oat milk could run. It’s a sweet and creamy non-dairy milk that packs a nutritional punch. It’s one of Horstman’s favorites, particularly non-GMO, organic, unsweetened soy milk. “It’s a non-dairy milk with a high amount of protein. In fact, it’s pretty comparable to cow’s milk in terms of protein,” she says. “Soy milk is also linked to improved heart health, thanks to its isoflavones: a plant compound.” 

Pros

  • High in protein
  • Can improve heart health
  • Froths well for lattes

Cons

  • Soy is a common allergy, some may need to avoid it
  • Can contain lots of added sugar

Best for: Lattes, cereal, and sipping

Flax Milk

Flax milk is an underrated non-dairy milk, if you ask me. It’s smooth, creamy, neutral, and blends perfectly with whatever you’re adding it to. It’s also a great source of vitamins like vitamins D2 and B12. In terms of taste, flax milk has just the right amount of seedy flavor without overdoing it, which means you don’t have to worry about it taking over. It’s beautifully mild and naturally flavorful, to put it plainly.

While it may not be as thick as an oat or almond milk, flax milk has a great consistency that works well in baked goods, beverages, or on its own. “Flax milk isn’t as easy to find as almond, coconut, and soy, but it’s a fabulous option that’s rich in omega-3 fatty acids and protein,” Horstman says. “I love that flax milk is gluten and glyphosate-free too.”

Rice milk is one of the most basic and low-key non-dairy milks out there. It’s stood the test of time over and over again and continues to weave itself into many people’s daily lives. If you like the taste of hemp seeds, you’ll love hemp milk! Because, well, it’s made of them. “Like flax and soy milk, hemp milk is high in protein. And like flax milk, specifically, it’s also packed with omega-3 fatty acids and contains a good amount of magnesium and vitamin D,” Horstman says. “It’s allergen-friendly if you’re allergic to nuts and you can easily make it homemade without a strainer!”

Cashew Milk

Cashew milk is known for having a distinct nutty flavor and a creamy texture. “You don’t get a great bang for your nutritional buck with cashew milk, but it does have a creamy texture and unsweetened cashew milk is low in calories,” Horstman remarks. “Similar to hemp milk, you don’t need to strain homemade cashew milk!”

Pea Milk

Admittedly, pea milk isn’t Horstman’s go-to, but the nutritional content has to be noted. “It’s high in protein (more than a serving of cow’s milk), it’s allergen-friendly, and it has a relatively low environmental impact,” she says. “Unfortunately, most pea milks have added oils, like canola or safflower oil—this isn’t an issue in small quantities, but it isn’t necessarily something to be guzzling every day.” Pea milk is made with pea protein and is nut-free, so those with allergies may find this to be an ideal non-dairy milk to try.

Hazelnut Milk

Hazelnut milk may not be making waves like almond or oat milk yet, but that doesn’t mean it’s not worth checking out. The flavor profile is deliciously nutty, and adding a bit of cocoa powder and maple syrup to it is like sipping on Nutella. Yum!

Disclaimer: salads aren’t my main focus at Trader Joe’s. I’m usually after fresh flowers, budget-friendly bananas, and seasonal treats. However, if I’m in a pinch for lunch and am looking for something 1) veggie-packed 2) satisfying and 3) even better than the classic combo of ingredients, only the best Trader Joe’s salad will do.

I’m a creature of habit with my meals. While I enjoy food trends and creative recipes, my weekday routine stays consistent: a smoothie for breakfast, a salad for lunch, and a seasonal bowl for dinner. (Though recently, I switched things up with Camille’s stunning roast chicken—highly recommend!). For this reason, I decided to put these nine salads to the test to see just what Trader Joe’s salad takes the cake.

Our Favorite Trader Joe’s Salads, Ranked

Clearly, my routines could use some shaking up, and what better time than while traveling? As a self-proclaimed (but reluctant-to-admit) digital nomad, I took a recent two-week trip to D.C. as the perfect excuse to put Trader Joe’s salads to the test and see if they live up to the millennial hype.

To stay consistent and fully embrace the fresh greens, I grabbed a different salad for lunch almost every day over the two weeks. I expected boredom and sugar cravings, but spoiler: I got hooked. While I won’t be a pre-made salad devotee forever, these picks have inspired me to recreate my favorites at home. Now, let’s dive into the rankings—starting with my least favorite and ending with the one that completely changed my view on eating vegan (for the better!). #8: Caesar Salad

Caesar salads are always hit or miss. I have yet to find one that toes the line between stellar and sad desk lunch-worthy. Unfortunately, Trader Joe’s offering fell into the latter category. But it’s possible that I had some preconceptions because I didn’t go into this one with high hopes. While many packaged salads can surprise me with their unexpected goodness, Caesar salad is rarely one.

I need a freshly made, heavy-on-the-anchovies dressing that perfectly coats the crunchy bits of romaine. The croutons have to give an audible crunch, and if there isn’t a heavy-handed serving of shaved parmesan, then I’m quick to ditch it. While all the components were there, this was more of a good-in-theory option. You have my permission to skip.

#7: Mexicali Salad

When I read through this salad’s ingredients, my eyes were alight with excitement. There was clearly a variety of texture and flavor at play, with crunchy cabbage, nutty pumpkin seeds, and the viral summer favorite—corn!—contrasting the creamy, jalapeño-spiked dressing. But while the hype was there, this one sadly fell flat on the delivery.

The chicken simply tasted like chicken, and I couldn’t detect any of the promised spicy, chili bite. And while the ingredients’ varied colors offered a visual delight, I can’t say that the flavor matched it. If you seasoned your own protein and used the caesar dressing as inspiration for your own creation, the other components might have been nice mixed in. But then again, if you went that route, this wouldn’t really count as a pre-made salad, would it?

#6: Classic Greek Salad

With a strong Greek contingent in my family supplying many of our reunions with unbelievable, salty, and fresh dishes, it’s quickly become one of my favorite cuisines. And sure, I know that not all Greek salads are made alike, but it’s the composition of the salad that has my heart. This Trader Joe’s take was so close to doing it perfectly. I loved the olives’ briny bite (kalamatas are a must), the cucumbers were snappy and crisp, and the red onion brought just the right amount of heat.

So what could I possibly have to complain about? You might write me off for being too particular, but when it comes to Greek salads, I prefer my feta in big blocks as opposed to crumbled. When they take on the latter form, they’re more evenly distributed throughout the salad. But there’s nothing like diving into a forkful of feta set against a juicy tomato. Cubes of feta make it a more significant part of the salad, and if you’re a fan like me, you know that’s crucial.

#5: Chopped Salad With Grilled White Chicken

Israeli couscous is hands down, one of my favorite grains. Don’t get it mixed up with rice! Israeli couscous isn’t actually couscous (confusing I know). It’s actually toasted pasta in tiny balls. The flavor is nutty and the texture is slightly chewy. It’s the perfect hearty mix-in for any veggie-forward dish. And in this salad, it shines. Oftentimes, it’s used as an afterthought, only meant to bulk up whatever it’s added to. But I felt that this salad was based around its soft, delicious bite.

The only drawback of this salad was the sweet basil dressing. I was hoping for something a little more basil-forward, with a peppery, anise-like flavor coming through. While I didn’t get that, this salad was still a solid lunch pick, and I got on with my afternoon tasks feeling satisfied.

#4: Broccoli Slaw & Kale Salad With White Chicken Meat

This was by far the heartiest, most satisfying Trader Joe’s salad of the bunch. And while that fact didn’t win it the number one spot, it went a long way in getting it into the top three. And with the texture trifecta of kale, sunflower seeds, and dried cranberries, I was easily sold.

Unfortunately, the chicken kept this salad from winning best overall. Perhaps this is a frustrating consistency, but the fact that the chicken was unseasoned (and, admittedly, a little dry), set this salad back. Even the sweet and spicy dressing, which, despite the name, I didn’t expect to be so (thankfully) packed full of heat, couldn’t give the chicken what it needed. Alas, I’ll be taking this combo into my future cooking forays and adding strips of my own roasted chicken.

#3: Avocado Ranch Salad

Packed with various cabbages, green onion, and carrots, the mix provides a satisfying crunch with a bag that’s twice the size of the rest of the salads that made the cut. The real highlight, however, is the creamy avocado ranch dressing, which delivers a rich, tangy flavor that can’t be beaten. The kit also includes crunchy corn chips for an added texture boost, making each bite a delicious mix of crispiness and creaminess.

Beyond its great taste, this salad kit is an ideal option for those seeking a quick, nutritious meal or an easy side dish while keeping things meat-free. The combination of fresh vegetables and protein-packed cheese makes it both filling and flavorful without being overly heavy. It’s also highly versatile and can be tossed with grilled chicken, crispy chickpeas, or used as a slaw for tacos or burrito bowls.

#2: Southwest Salad

As a principal, I’m usually suspect of anything wearing the label “southwest.” No shade thrown to that part of the country! I’m always in awe at its open, saturated skies and Georgia O’Keeffe’s capturing of the humble brilliance of its landscape. But it’s often used as an all-encompassing appellation that washes over the individual flavors found within. After trying the to-go Southwest Salad last year, I decided it was worth giving the new chopped salad version a try. The flavor of the cojita cheese was less masked by the bold chipotle ranch, likely due to a better ratio of veggie-to-sauce.

I loved the crunchy-creamy interplay of the black beans, red onions, and cabbage. And when it comes down to it, the zesty flavors do make an excellent match. At the end of the day, this salad made me smile. (How many salads can you say that about?) But where I really wanted it to shine, it left me wanting more.

#1: Vegan Super Spinach Salad

And now onto what I consider the best Trader Joe’s salad. While it might not seem like the most interesting and show-stopping salad, what this pick lacks in initial pizzazz, it definitely makes up for by the first bite. Quinoa, carrots, cranberries, chickpeas, edamame, pumpkin seeds (and of course, spinach) make a surprising amalgam of healthy, but absolutely crave-worthy ingredients. I’m always a fan when nutrient-dense foods intersect with incredible flavors, and this salad did the pairing justice.

I’ll end on this note: the dressing. Carrot brings the color, miso brings the salty, umami depth, and ginger supplies a warming hit of spice that stands behind every bite. This salad has redefined spinach for me. Don’t pass it by!

The flip side? There’s concern that snacky, dainty meals reinforce gender stereotypes and toxic diet culture. The key is balance. If you’re tossing together wholesome, satisfying ingredients, girl dinners get the green light.

How often should you eat a girl dinner?

There’s no quota, but your intention matters. Say it’s the end of a long day and you want something low-effort. In that case, go for it. Compiling your favorite foods—and kicking your feet up on the couch—is a luxury worth relishing. It’s also a creative opportunity to reduce waste.

As women, we’ve long been programmed to view food as the enemy (been there, experienced that). But at its core, girl dinners celebrate the simple pleasure of grazing for a meal. Just make sure you’re tailoring your small plate to two things: your own nutritional needs and your hunger level. If you decide to hop on the trend, consider the following guidelines—they’ll help you stay fuller, longer while keeping blood sugar in check.

Protein

Aim for 4-6 ounces of high-quality protein (poultry, eggs, cottage cheese, grass-fed red meat, sustainable seafood, etc.) or 1/2-1 cup of non-GMO soy, beans, or legumes. This is roughly a fist’s size of protein.

One of my favorite moments of any day is the first sip of coffee. Hot, iced, sweet, or black, I can safely say I’ve been a lover of all varieties of coffee for quite some time. It wasn’t until recently that I began to see low-acid coffee brands pop up in local grocery stores with promises of being gentler on the gut, and I’ve been intrigued. You know what the internet says: tummy troubles are a hot girl problem. So, I set out to try the top low-acid coffee brands that might give my gut a break and allow me to enjoy my mornings a bit more. With the tips and low acid coffee brands below, you can too.

What is low-acid coffee?

I had many questions about what exactly acidity is, what it can do to your body, and how to find a coffee with a lower acidity content. Generally, coffee is a highly acidic beverage due to the type of beans used, the roasting method, and the presence of caffeine. This combination of factors can sometimes lead to an upset stomach or a nasty caffeine buzz. With low-acid coffee gaining popularity, I put several brands to the test to see just how these brews hold up.

How Coffee Impacts Digestion

Let’s be honest—coffee can be a bit of a troublemaker when it comes to digestion. I know the impulse to reach for a cup first thing in the morning, but having something to eat beforehand is key to avoiding an unhappy stomach. Caffeine can spike cortisol levels if you’re running on empty, and coffee itself can boost stomach acidity by triggering extra hydrochloric acid. This can cause heartburn, acid reflux, and overall discomfort—definitely not the best way to start the day.

What Makes Certain Coffee Less Acidic

Without switching up your morning routine, you can easily add a bit of milk or cream to your coffee, which neutralizes the acid. However, if you’re already prone to stomach issues, more dairy may not be the answer you’re looking for. Where your coffee beans are harvested and the elevation of harvesting can determine the acid content. When you’re shopping, look for beans from Vietnam, Brazil, Sumatra, and Nicaragua if you’re aiming to lower your acid content.

If you’re brewing at home, there are a few ways you can reduce the acidity in your morning brew. Some tips:

  • Elongate your roasting time. Both roasting temp and duration can affect the acidity of your coffee. To lessen your coffee’s acidity, try brewing at a higher water temperature but for a longer period of time. Your coffee may seem more bitter than usual, but the actual acid content will be significantly lower.
  • Incorporate eggshells into your grounds. Since eggshells are alkaline materials, they work to reduce the acidity of anything they are incorporated into, including your morning cup of joe.
  • Use a coarse grind of coffee beans. Because finely ground coffee contains more particles than coarsely ground coffee, using coarser grounds at a lower temperature will prevent your brew from being acidic and bitter. Score!

Finding Less Acidic Coffee Roasts

When it comes to roasts—light, medium, and dark—dark roast takes the crown for the lowest acidity. It contains fewer compounds that trigger acid production in the stomach. Switching up your brewing method can also help. Espresso, with its quick brew time, and cold brew, which uses less heat, tend to be less acidic.

The Chef-Owner of Dad’s Luncheonette Shares His “Rules of the Road”

1. Prep for your landing.

If you’re going to take a leap and do something you haven’t done before, jump with mindfulness. Where am I going to put this hot pot? Do I have a bowl for my kitchen scraps? Answer those questions before you start. Prepping for your landing ensures that when you’re doing something outside your comfort zone, you have everything in place to know that you’re safe.

In restaurant kitchens, the term for this is “mise en place.” But it’s not just measuring out ingredients beforehand. You mise en place yourself, your station, your kitchen. Come with an apron on and a kitchen towel folded over your apron strings. Set up a clean water bath, or what chefs call a bain-marie, full of spoons and a whisk. Get your kitchen timer in place. Put all those things in order, so you can get out of your comfort zone but still feel secure that you know where everything’s going to go. Then you can crush it. You have to be organized to cook well. Not only will you do it better, but you’ll also make less of a mess, wash fewer dishes, be all-around more comfortable, and have more fun.

2. Read the recipe before you start cooking.

This is mise en placing your mind. Put another way, your recipe (yes, including the headnote) is your guidebook and road map to where you’re going; it details everything you need to cook the dish successfully. I like to hit the road fully aware, especially when the journey takes a few hours, like a lot of the recipes in this book do. You don’t want to discover you can’t make it to your destination on time, no matter how recklessly you speed, just like you don’t want to try to make Chicken Liver Mousse (page 270) last minute, only to find out you were supposed to brine the livers overnight. You don’t want to find yourself stranded on the side of the road without a spare tire, just like you don’t want to attempt to replicate Dad’s Hamburger Sandwich without Pickled Onions in your fridge. We’re after a chill ride, and hopefully, reading the recipes will be a pleasure in and of itself.

You have to be organized to cook well. Not only will you do it better, but you’ll also make less of a mess, wash fewer dishes, be all-around more comfortable, and have more fun.

3. If you’re cooking, you’re tasting.

The reason things taste so good at Michelin-starred restaurants is that someone put a spoon in the food and put that spoon in their mouth and kept doing that with more spoons about fifteen times before the dish got to the table. If you’re cooking in one of these restaurants, you probably shouldn’t need family meal because you taste food so many times during the day. At 4 p.m. every day at Saison, we’d call for tasting trays. Ice cream, caviar, diced grapefruit, lobster gelée, micro herbs—the sous chefs and I would taste every component of every dish we prepped. The thing that always got me is when people didn’t clean their cutting boards between jobs. I would put that grapefruit in my mouth and taste shallots. You have to be able to catch those things. And with long-cooked dishes like soups and stews, you want to see how your flavors are developing and whether you need more seasoning. Taste as you go, always.

4. Lavish attention on everything.

Cooking is like being in a long-term relationship. You have to keep dating your ingredients. You can’t just expect them to be there every day if you don’t keep the spark alive. Be a lover; open the door for your ripe tomatoes. Show them your passion. Wash them, appreciate their seasonality, and put them to bed lovingly.

5. Store everything properly.

If you don’t pack and stow foods correctly, then all of your good work turns sour. Throughout these recipes, I mention how long you can keep foods and how you should store them. Take my advice. Then give yourself the time to wrap and stack things right. Use airtight containers in your fridge and freezer. Label the containers so you know what’s in them and how long it’s been there. You’re making all this fun stuff, and you want to keep it at the right temperature and in the correct condition to ensure its deliciousness.

6. Your hands are tools.

It’s a frowned-upon scenario for some people, but I’m telling you: Cooking is high touch. Wash your hands first, then touch everything. I’m a tactile human, anyway, because of my ADHD. I want to touch. But it’s sensible too. It’s as simple as knowing how soft a lemon is, or if a radish is woody. It’s kneading dough, it’s tossing salad, it’s pulling the meat from the pig’s skull for head cheese (page 271). If you just get in there and get after it, you learn a lot in the process. You can use the insight you gain to become a more capable cook. I also promote eating anything you can with your hands. Feel it, love it, grab it, get involved.

7. Focus.

Hands on the wheel, eyes on the road. Slow down, think intentionally, and you’ll learn a ton. Things that feel foreign at first will become your signposts, and small, even seemingly annoying techniques will reveal themselves to be wildly useful because you strove to understand what it is you’re doing. Why do we peel fat asparagus and then cook it in a broth made with its peels? Do it carefully, taste it, and you’ll know why. The first time you prepare a recipe, you’re clunky, but if you pay close attention, by the third or fourth time, you’re moving gracefully. So be present while creating a meal for yourself and your loved ones. You’ll enjoy the process more.

5 Strategies for Easy Vegetarian Meals

Cooking is an act of self-love. It’s the ultimate form of everyday nourishment, other than a restful night’s sleep. That said, some of the most popular cookbooks lack easy vegetarian meals. Speaking from personal experience, being able to throw together a nutritious and accommodating meal in a pinch is anything but easy. From how you grocery shop—to your food preparation and meal choices—there are strategic ways to whip up easy vegetarian meals in a pinch. Plus, these tips will lessen your leftover load and save you money. Win, win.

1. Stock Smart

Keep ingredients on hand that have a long shelf life. This will ensure that there’s always an abundance of ingredients that can be thrown together in a pinch. Shelf-stable options include pasta, rice, beans, lentils, olive oil, maple syrup, nut butter, balsamic vinegar, and non-dairy milks. Most canned goods (soups, diced green chiles, artichoke hearts, hearts of palm, etc.) also fall into this category.

As far as refrigerated items go, think eggs, jarred minced garlic, olives, dijon mustard, lemons, limes, apples, etc. For on-the-counter produce, squashes, onions, and potatoes will last for weeks (or months) in a cool, dark place.

2. Meal Plan

This goes without saying, but meal planning is king. If you’re new to planning meals, it’s a game-changer—especially when you’re plant-based. While you may be tempted to buy a variety of produce, snag extra punnets of on-sale blueberries, etc., less is more. Instead, opt for a smaller variety of vegetables that can be used in multiple recipes (so you don’t end up bored with just one or two meals!). For example, plan to buy bell peppers, onions, carrots, and spinach—all of which can be used in a quiche, tacos, pasta, soups, and more.

3. Reinvent Plain Protein

Most of us aren’t interested in days and days of the same leftovers, so it’s best to prepare ingredients that can be used in various ways. For example, whip up a simple baked tofu and add it to a protein-packed salad or wrap.

4. Shop Frozen

Frozen produce is the gift that keeps on giving. Boil, steam, sauté, or toss fruits and veggies into smoothies, soups, frittatas, fajitas, or oatmeal. But what I’ve noticed is that the more balanced my diet becomes—incorporating both plant-based and occasional animal-based foods—the better I feel. It’s not about adhering strictly to one diet or another, but rather about finding what makes me feel my best. So, in the spirit of feeling good, I’ve decided to give my body a reset by focusing on plant-based meals. And for me, the key to making this work is plant-based meal prep!

Plant-Based Meal Prep: Tips for a Week of Healthy Meals

I don’t know about you, but the last thing I want to do on a busy day is cook a complicated meal. If it’s not prepped ahead of time, I’ll often find myself reaching for something quick, but usually, that quick fix doesn’t offer the kind of nourishment my body needs. That’s why plant-based meal prep has become a game changer for me.

It’s not about cooking every meal in advance but about prepping ingredients that I can quickly assemble into satisfying, nourishing meals. My preference? Plant-based grain bowls. They’re quick and delicious, and they provide a balanced combination of flavor, texture, and nutrition to keep me energized throughout the day.

Make it a Sunday Ritual

One of the best ways to streamline plant-based meal prep is by dedicating time on Sunday to chop and prep your ingredients for the week. I usually spend about an hour getting fruits and vegetables ready, and trust me, it’s a huge time-saver. When it’s time to cook or assemble meals during the week, I can quickly grab what I need without spending extra time chopping. Make this ritual enjoyable—play some music, pour a glass of wine, and enjoy the process. Once your veggies and fruits are prepped, store them in airtight containers and pop them in the fridge or freezer, ready to go.

Memorize the “Grain Bowl Formula”

When it comes to plant-based meal prep, I swear by my grain bowl formula. It’s a simple structure that lets me mix and match ingredients based on my mood, ensuring that every meal feels fresh and exciting. Here’s how it goes:

  • Grain: Choose your favorite base—quinoa, farro, barley, brown rice, or a mix.
  • Green: Massaged kale is my go-to. It’s packed with nutrients and lasts all week in the fridge.
  • Bean: Beans are essential for plant-based protein and fiber. I love marinating them to make them extra flavorful.
  • Roasted Veggies: Choose hearty veggies like broccoli, butternut squash, and red onion. These hold up well and are easy to toss into any dish.
  • Sauce: A flavorful sauce is key to making the bowl feel satisfying. My favorite is a garlic-lime tahini sauce.
  • Crunch: Add texture with toasted nuts, seeds, or even savory granola.

With this formula, I always have the ingredients for a delicious plant-based grain bowl ready to go.

Start with the Longest-Cooking Item First

Meal prep becomes even easier when you work efficiently. Start by cooking the grains (they take the longest), then move on to marinating beans, massaging your greens, and making your sauce while the grains cook. You could even prep more than one type of grain for variety throughout the week. I love cooking brown rice and quinoa, which both make a great base for plant-based grain bowls or salads.

Pack it Up for Optimal Freshness

Once everything is cooked, let it cool, and store your grains, beans, and veggies in airtight containers in the fridge. This ensures that your plant-based meal prep ingredients stay fresh and ready for easy assembly during the week.

Marinate Your Beans

Canned beans can be a bit plain on their own, but marinating them adds so much flavor. I rinse and drain a can of chickpeas (or any beans you like), then toss them with olive oil, rice wine vinegar, honey, minced garlic, salt, and red pepper flakes. Let them sit in the fridge for a few hours or overnight, and they’ll taste even better the next day.

A Flavor-Packed Sauce Goes a Long Way

A homemade sauce can elevate any plant-based meal. While store-bought dressings are fine, nothing beats the fresh flavor of a homemade dressing, pesto, or dip. My go-to is a garlic-lime tahini sauce, and it’s incredibly easy to make with ingredients you probably already have in your pantry. Trust me, once you try it, it’ll become a regular part of your plant-based meal prep routine.

Ingredients

Units

For the ras malai pieces: 

  • 2 containers (16 ounces) whole milk ricotta
  • 2 tablespoons granulated sugar
  • Ghee/butter for greasing

For the rabdi: 

  • 1/2 gallon whole milk
  • 2/3 cup granulated sugar
  • 89 threads saffron
  • Pistachios, for garnish

Instructions

  1. Preheat the oven to 350 F. Mix together ricotta and sugar in a medium bowl until the sugar is fully dissolved and incorporated.
  2. Grease a 9-inch pie plate with ghee. Spread the ricotta mixture evenly into the pan and smooth out the top.
  3. Bake for 35-40 minutes until the ricotta is set and firm to the touch. It should not be jiggling in the pan. Let cool to room temperature.
  4. Meanwhile, pour the milk into a 3-quart saucepan. Let it come to a boil, stirring constantly to ensure that the milk does not burn on the bottom of the pan. When it comes to a boil, lower the heat to let it constantly simmer. Keeping an eye on the milk to ensure that it does not boil over, and stirring constantly, let it simmer for about 15 minutes until the milk has reduced by a third.
  5. Add the sugar and continue to let it simmer until the milk has reduced by half.
  6. Place the saffron threads in a small bowl and add a spoonful or two of the warm milk to make a saffron milk mixture. Once the milk looks concentrated and is a deep marigold color, pour it into the pot and stir. Turn off the heat and let cool, while cutting the ricotta.
  7. Once the ricotta has cooled, cut out 2-inch pieces. I use a round cookie cutter, but my mom always makes squares out of the pan to ensure that there is zero waste. Drop them into the milk and stir, ensuring that each ricotta piece gets soaked. Let it sit overnight in the fridge.
  8. When ready to eat the next day, spoon out milk and rasmalai pieces into a bowl and sprinkle with pistachios.
